Strawberry Soup
My youngest LOVES strawberries! He would eat them all day if we had enough to make it through a whole day! With strawberry season fast approaching I want to make sure we have used up all of our frozen strawberries before we go picking in about a month. It's also giving me good reason to try new recipes using strawberries.
I have been using this cute little cookbook for kids called, Kosher by Design Kids in the Kitchen by Susie Fishbein.
There is a recipe in there for strawberry soup. It is very simple to make, very good, and very healthy!!
It calls for 2 cups of strawberries (I used my strawberry puree), 1/2 cup of buttermilk or sour cream (I used buttermilk), 1 cup of vanilla yogurt, 3 Tbs. of sugar, and 1 tsp of vanilla extract.
Put all of your ingredients into a food processor or blender and blend.
In a few seconds it will be the perfect consistency. Just like soup! This made about 1 quart of soup.
Pour it into a bowl and serve! I added a teaspoon full of strawberry puree to make the swirl.
This made a very nice breakfast. It didn't last much longer than that!
