Watermelon Italian ice

It has been a very hot, summer-like week up here in the North. Beautiful 80 degree days. And guess what! Watermelon is on sale!!!

I picked one up and brought it home. We LOVE watermelon. With the holiday weekend fast approaching this super, super easy treat would be perfect to serve at your family picnic. And sooo Americana served in mason jars.

I used Ree Drummond's recipe from her book, The Pioneer Woman Cooks Food From My Frontier.

She made watermelon granita with it. I chose to do Italian ice simply because of space at that time in my freezer. The little jars just work out perfect! I do have every intention of making the granita.:)

She simply uses 8 cups of watermelon, lime juice from two limes, and 1/3 cup of sugar.

Put your ingredients into a blender and blend. Pour into 4 oz. mason jars, screw the lid on, and put them in the freezer! Finished!

You couldn't ask for it to be any easier! I love the flavor of the watermelon with the lime! Mmmmm.......the combination is lovely...

ahhhh...summer time.........

(As I finish writing this post the heavens have opened and it is now pouring rain....sigh.) The good Lord knows we needed the rain though.;)

"Thou visitest the earth and waterest it: thou greatly enrichest it with the river of God, which is full of water:thou preparest them corn, when thou hast so provided for it.

Thou waterest the ridges thereof abundantly: thou settlest the furrows thereof:thou makest it soft with showers: thou blessest the springing thereof."

Psalm 65:9 & 10
